  • 1 cup dates, pitted
  • 23 tablespoons maple syrup
  • 1 cup oats
  • 1 tablespoon coconut flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cardamom
  • 1/2 teaspoon ground ginger
  • Coconut flakes (for rolling)

Instructions

  • Prepare Ingredients: Grate the carrots and pit the dates if they are not already pitted.
  • Blend: In a food processor, combine the grated carrots, dates, maple syrup, oats, coconut flour, cinnamon, cardamom, and ground ginger. Blend until the mixture is well combined and sticky.
  • Form Balls: Scoop out small portions of the mixture and roll them into balls using your hands.
  • Coat with Coconut: Roll each ball in coconut flakes until evenly coated.
  • Chill: Place the energy balls in the fridge for at least 30 minutes to firm up.
